Its origins are unclear, but many believe that it first appeared in Italy in the 8th and 9th centuries. But the first documented records of it appeared in France, where it quickly became one of the stars of classic French confectionery. Macarons, as we know them today, became really popular in the early 1800’s, in Paris, when the first modern macarons were created by a confectionery called Ladurée.

In Hungary, its popularity has really peaked in the last few years, and thanks to the growing interest in it, it has been offered in more and more places in different flavours and colours. But what makes them so special?

Making macarons is a real art: the mixture of almond flour, icing sugar and egg whites has to be worked into a perfect mass, then shaped into small, uniform mounds before being placed in the oven. During baking, they develop their characteristic slightly crispy crust, while remaining soft and creamy inside.
